I’ve been working from home for a while now and really enjoy the flexibility of it. I’ve also been able to make better decisions when it comes to my lunch choices.
That said, as work as gotten busier, I still have the same issue I had when I worked in an office. What quick and healthy lunch can I grab so I can get back to work? Thankfully (for my waistline) I don’t have the office cakes to contend with anymore!
I’ve come up with a few quick and healthy lunch ideas for work that take little time to prepare, are delicious and lunches I look forward to. More importantly, I can get straight back to work and tackle the To Do list!
When possible, I try and cook extra at dinner times so that I can warm up the leftovers the next day – easy! I’ll either use these leftovers for the next night’s dinner or for lunches for me.
Here are my 5 quick and healthy lunch ideas for busy people:
1. Pork Stir Fry with Ginger & Pineapple
This is a firm family favourite for us and we love stir fries all year round. At dinner time I’ll stir fry diced pork and vegetables such as red capsicum, carrots, broccoli, onion, snow peas and red cabbage. Then I’ll add in chopped, fresh pineapple, garlic, ginger and soy sauce.
The next day, I can either microwave the leftovers or reheat in a pan. Low carb and healthy and such a sweet, tasty stir fry.
2. Spaghetti Bolognese
My family loves pasta! When I make Bolognese, I make a huge batch so that there is plenty left over. It can either be frozen, saved for lunch or turned into another meal such as chilli con carne.
At lunchtime, I’ll either reheat the leftover Bolognese sauce to eat alone or pop some into a jacket potato cooked in the microwave. So quick to make.
On days when I don’t have leftovers of it, I grab the Weight Watchers Beef Bolognese version. It’s from their Light Menu range with just 7 SmartPoints and heats up in the microwave in minutes.
3. Fresh fruit and Greek Yogurt
On days when I don’t feel overly hungry but still want a quick and healthy lunch, I’ll chop up fresh fruit into a bowl and add in Greek yogurt – so yum and feels more like a dessert than lunch! Adding pineapple and rockmelon are my current favourites.
4. Thai Green Chicken Curry
Another of my favourite Weight Watchers frozen meals. It’s quick and easy to heat, tasty, and stops me from grabbing an unhealthy alternative when I’m pushed for time.

5. Chicken & Vegetable Risotto
I love this risotto and I’ve never mastered the technique of making a good risotto myself (yet!) so this is a fantastic, quick and healthy lunch already made for me!
Made with white wine and garlic, it’s from their Classic Menu and has 10 SmartPoints.

Trying out the new Weight Watchers range has inspired me to rejoin the Weight Watchers meetings having had success with them in the UK before I moved back to Australia.
